Our Legacy: Making a Lasting Impact 

Impacting lives, building valued relationships and being a role model for those in the hospitality industry has always been at the heart of Table 301. So, when owner, Carl Sobocinski started to consider downsizing his company in 2019, he created an exit strategy that surprised many in the business.

Instead of selling his beloved restaurants to just anyone, he proposed a succession plan that turned into a way to cultivate and motivate a new generation of restauranteurs. Sobocinski began proposing and offering his company’s knowledge, industry connections, marketing support, and funding for restaurant ownership to some of the company’s most aspiring employees.

Here are the stories of five Table 301 associates (so far) who have dreamed the dream and are now successful restaurant owners in Greenville thanks to the support, encouragement and mentoring of Carl Sobocinski and the Table 301 team.

Jorge Baralles, Sr., aka “Papi,” began his career as a dishwasher for Table 301’s flagship restaurant Soby’s when it first opened in 1997, often making tacos for the staff meals. In 2013, Carl Sobocinski approached Papi about opening a taqueria and putting his name on it. Papi’s Tacos opened in downtown Greenville along the Reedy River as part of the Table 301 Restaurant Group later that year and offered a simple menu that featured tacos, tortas, salsas and dips. The food represented the same authentic flavor combinations that Papi and his family grew up with in Mexico. In 2019, Papi became the sole owner of Papi’s Tacos. A second location opened in downtown Greenville in 2023.

Carl Sobocinski and Michael Kramer first met during the 2010 euphoria event – the food, wine, and music festival held in Greenville each September which was co-founded by Sobocinski. At the time, Kramer was participating as a guest chef from Houston when discussions ensued about the two of them opening a restaurant together. Kramer moved to Greenville in 2013 and joined Table 301 as Corporate Chef of Culinary Operations, while knowing the goal was to eventually own and operate a restaurant of his own. In 2017, Table 301 opened Jianna with Kramer as Chef/Partner. Featuring a modern Italian cuisine kitchen with fresh pastas, freshly shucked oysters and artisanal spirits and wines, Jianna presents guests with an exceptional dining experience in downtown Greenville overlooking Falls Park. Chef Michael Kramar became the sole chef/owner in early 2020.

Sitting at one end of the iconic Greenville Liberty Bridge is Passerelle Bistro, known for its classical French fare, red awnings, and stunning views of Reedy River waterfalls. In 2013, Table 301 acquired the restaurant, and it quickly became one of the city’s most beloved dining spots. In 2017, Table 301 employee Michael Minelli was named general manager and soon expressed an interest in owning the restaurant himself. Collaborating with Carl, the two were able to come to terms with a deal that included sweat equity, performance and profitability goals and a financial investment. In January of 2021, Michael acquired the business to become the sole owner of Passerelle Bistro.

When Olivia Esquivel first approached Carl Sobocinski about partnering to open a cold-pressed juice bar in Greenville, there was some skepticism about the project. Most people in the area were unfamiliar with the idea of cold pressed juices. Following a lot of research and some serious discussions, the two decided to open a store in 2015 on Washington Street.  Today, Southern Pressed Juicery offers a wide selection of cold-pressed juices, cleanses, superfood smoothies, energy bowls and gluten-free plant-based foods like salads, oatmeal, granolas, and doughnuts. In 2020, Southern Pressed Juicery had its best year ever – selling more than 63,000 juices and in September 2023, Olivia Esquivel became the sole owner.
